Tarta de Helado (Ice cream cake)

Cake:
4 eggs
3/4c sugar
3/4c flour
1tsp baking powder

Bake for 12min @ 350F

While baking, prepare a towel on a flat surface and sprinkle icing sugar as a base. As soon as the 12minutes are up, pull out the tray and carefully with a spatula separate pastry from the pan and flip it over on to the towel.

With a box of ice cream a little melted, spread across pastry. Then using the towel, roll it together.

Don’t fill ice cream to the very edges until you have finished the roll.

Cover and place in freezer.
